The course is aimed at the design of new technological lines and production systems for the food and food processing industries. It covers the development of process flow diagrams, calculation of material and energy balances, equipment selection and layout, determination of operating conditions and production capacity, process scale-up from laboratory to industrial level, and the requirements for sanitary design, reliability, safety, and the techno-economic efficiency of engineering solutions.
The course is aimed at the advanced study of modern risk-based management systems for food quality and safety. It covers the requirements of the legislation of the Republic of Kazakhstan, the principles of HACCP, the provisions of the Codex Alimentarius, the requirements of the ISO 22000 standard and integrated management systems, hazard identification and assessment, verification and validation of control measures, traceability, internal auditing, and the management of nonconformities at food and food processing enterprises.
